Hitting The Right Stride With Cornerstone Catering, Canmore
The Rocky Mountain Soap Run is an annual event that raises funds for Fast and Female, an organization dedicated to promoting “a positive, empowering environment for girls in sport.” Started in 2008, the event now tracks over 3000 runners, all tackling a challenging course for a great cause!
Cornerstone Catering was contracted for the 2017 and 2018 event, tasked with feeding three thousand runners and countless volunteers nutritious, delicious, and efficient meals over the course of two days. Our chefs worked diligently to prepare options that were suitable for a wide variety of dietary needs, including those requiring vegetarian and gluten-free meals. We also made sure volunteers had access to healthy bagged lunches and that locally roasted coffee was readily available to help keep everyone full of energy!
A Food Lover’s Paradise
The Canmore Uncorked Festival is an annual 12-day festival, dedicated to celebrating the incredible food and drink culture nestled in the heart of the Rocky Mountains. Our team took part in the extremely popular Canmore Uncorked Bistro Tour in 2017 and 2018.
The tour is an intimate event with just 35 guests per evening. Guests are chaperoned to 4 venues and were served a delicious meal from Cornerstone Catering in 3 of these venues. Each meal was paired with wine from Mission Hill and guests were delightfully entertained by the award winning Quartetto Gelato. Our menu for 2018 consisted of venison ravioli (ravioli was donated by the Canmore Pasta Co) made with maple syrup, fennel, sage and topped with a warm wild mushroom and cerignola olive tapenade. The second venue was at Evoolution Oils and Vinegar and consisted of their black cherry balsamic vinegar with braised elk ribs served with a warm cherry chutney. Our third course was at The Hive Gallery and we served marinated charred wild boar shank with squash puree, fondant potatoes and grilled white asparagus.
The event ran for 4 evenings and our chef and staff were happy to be a part in showcasing the incredible tastes of our local community.
